Peaches with coffee sabayon
A tasty recipe. The dessert contains the following ingredients: eggs, macaroons (300 g bag), white wine, almond shavings ((55g), coarsely chopped), white caster sugar, peaches (cans 410 g), butter, cold espresso (or strong coffee). and icing sugar.

Split the eggs.

Preheat the oven to 180 ° C.

Crumble the macaroons and mix them with the wine, the almond shavings, 1 egg yolk and 1 tbsp sugar.

Fill the peaches with the mixture and put a knob of butter on it.

Put them in the baking dish and fry them for 25 minutes.

For the sabayon, whisk the remaining egg yolks with the rest of the caster sugar for at least 10 minutes in a bowl over a pan of boiling water.

Add the coffee when the mixture is lukewarm and beat for another 5 minutes until it has the thickness of custard.

Remove the peaches from the oven, let cool for 10 minutes and sprinkle with icing sugar.
