Peanut soup with sweet potato

Directions

  1. Heat the oil in a large (soup) pan and fry the onion, garlic and ginger 2-3 minutes.
  2. Add the peppers and sweet potato cubes and fry for about 3 minutes.
  3. Sprinkle with the cayenne pepper and add the tomato cubes. Bake everything for another minute.
  4. Dissolve the vegetable stock tablet in 1 liter of hot water and pour into the pan. Bring the soup to boil and simmer gently for 5 minutes with the lid on the pan.
  5. Stir in the peanut sauce spoon to spoon. Stir well so that the sauce dissolves and the soup binds.
  6. Divide the soup over deep bowls and stir in the coconut milk.
  7. Sprinkle with the peanuts and serve with a lime wedge.
