Pearl couscous with zucchini


Pearl couscous with snow peas, zucchini, green olives, sundried tomatoes and white cheese.

Directions

  1. Bring the water to a boil. Add the couscous, tomato paste and possibly salt and cook for 12 minutes until done. Drain and drain.
  2. Put in a large bowl. In the meantime, cook the snow peas for 4 minutes and drain.
  3. Meanwhile, grate the zucchini coarsely in the food processor or with a grater. Let the tomatoes drain and halve. Slice the mint leaves.
  4. Stir in the couscous with a fork and add the zucchini, fresh mint and vinegar.
  5. Mix the snow peas, olives and oil through the couscous.
  6. Let the cheese cubes drain and carefully scoop. Season with pepper.
