Pearl couscous with zucchini
Pearl couscous with snow peas, zucchini, green olives, sundried tomatoes and white cheese.

Bring the water to a boil. Add the couscous, tomato paste and possibly salt and cook for 12 minutes until done. Drain and drain.

Put in a large bowl. In the meantime, cook the snow peas for 4 minutes and drain.

Meanwhile, grate the zucchini coarsely in the food processor or with a grater. Let the tomatoes drain and halve. Slice the mint leaves.

Stir in the couscous with a fork and add the zucchini, fresh mint and vinegar.

Mix the snow peas, olives and oil through the couscous.

Let the cheese cubes drain and carefully scoop. Season with pepper.
