Penne with Italian herb sauce


Italian herb sauce with eggplant, sausage and pasta.

Directions

  1. Cook the penne according to the instructions on the packaging and pour.
  2. Meanwhile cut the aubergines into cubes of 1 x 1 cm (brunoise). Remove the skin from the sausages and divide the sausage meat into pieces.
  3. Heat the oil in a frying pan and fry the sausage meat on high heat 2 min. Add the eggplant and cook for another 4 minutes.
  4. Pour in the pasta sauce and cook over medium heat for 2 minutes. Change regularly.
  5. Meanwhile, clean the lemon and grate the yellow skin. Slice the leaves of the parsley. Let the olives drain.
  6. Add the lemon zest, parsley and olives to the sauce and warm for another 1 min.
  7. Serve the pasta with the sauce.
