Heat the stock in a soup pot and add the soy sauce, ginger, cloves, star anise, garlic and the cinnamon stick. Let simmer for about 30 minutes at a low setting.

In the meantime, cook the noodles according to the instructions on the packaging.

Remove the pan from the heat source and pour the broth through a sieve so that only the liquid remains.

Pour the stock back into the pan, add the fish sauce, steak and broccoli and cook for about 3 minutes. Season with salt and pepper.

Divide the noodles over 4 large bowls and spoon the stock with the steak strips and broccoli.

Serve the soup with the red pepper, coriander and spring onion.
