Make a dressing of the mayonnaise, white wine vinegar, sugar and cumin seeds (or powder). Scoop the coals and onion through and let this take at least 1 hour.

Bake the pita bread and in the meantime stir fry the shawarma meat on a high setting.

Cut open the hot pita bread and fill it with the meat and the coleslaw.

Delicious with yoghurt aioli.
