Directions

Peel the shallots and the garlic.

Puree them with ginger, chilli powder and anchovies to a coarse paste.

Heat the oil in a wok or frying pan and stir-fry the pasta for 1 minute.

Add water and vinegar and mix well.

Put the salmon nuts in and poach 3-4 minutes.

Turn them over once.
-
Put the salmon on warm plates.
-
Spoon the mango through the poaching liquid and serve the sauce over the fish.

Sprinkle the spring onions.
