Directions

  1. Peel the shallots and the garlic.
  2. Puree them with ginger, chilli powder and anchovies to a coarse paste.
  3. Heat the oil in a wok or frying pan and stir-fry the pasta for 1 minute.
  4. Add water and vinegar and mix well.
  5. Put the salmon nuts in and poach 3-4 minutes.
  6. Turn them over once.
  7. Put the salmon on warm plates.
  8. Spoon the mango through the poaching liquid and serve the sauce over the fish.
  9. Sprinkle the spring onions.
