Preheat the oven to 180ºC.

Boil the sweet potatoes with the garlic in about 20 minutes and then stamp to a fine puree.

Add the butter, flour, thyme leaves and the egg and season with salt and pepper.

Put the mixture in the piping bag and spray rosettes of approx. 3 cm Ø on the baking sheet.

Bake the duchesses for about 25 minutes in the oven until the outside is crisp and golden brown.
