Directions

  1. Preheat the oven to 180ºC.
  2. Boil the sweet potatoes with the garlic in about 20 minutes and then stamp to a fine puree.
  3. Add the butter, flour, thyme leaves and the egg and season with salt and pepper.
  4. Put the mixture in the piping bag and spray rosettes of approx. 3 cm Ø on the baking sheet.
  5. Bake the duchesses for about 25 minutes in the oven until the outside is crisp and golden brown.
