Puff pastry snacks with brie and apricot jam

Preheat the oven to 200ºC.

Cut the slices of puff pastry into 4 squares (total 8). With the blunt side of a knife, carve edges on the sides of the puff pastry and brush them with whipped egg yolks.

Prick holes in the middle of the dough with a fork and place slices of brie on them. Sprinkle with some dried thyme and fry in the oven for about 15 minutes.

Put a little apricot jam on the brie snacks and serve immediately.
