Puree all the ingredients for the mojo in the food processor until everything is fine and the sauce is nice and liquid. Is the mojo too dry. Then add some olive oil and red wine vinegar. Taste well to keep the taste in balance. Season with salt and pepper.

Boil the potatoes in the shell with a lot of sea salt almost done. The trick is to have them boil dry, as it were, in sea salt, creating a salt crust.

Spread the pork chops on both sides with mustard. Fry on each side in 4 minutes brown.

Sprinkle with salt at the last minute.

Remove the pork chops from the pan and pour some stock (or water) into the pan to make a gravy. Just stirring and ready is the gravy.

Serve the pork chops with the wrinkled potatoes, the mojo and the gravy.
