Directions

  1. Heat 2 tablespoons of oil in a stirring fruit, the sambal oelek, the curry powder and the herbs.
  2. Stir fry the onion, green beans and paprika for 3 minutes.
  3. Add the zucchini, coconut milk and stock and gently simmer for 10 minutes.
  4. Sprinkle the meat with salt and pepper. Heat the rest of the oil and fry the meat golden brown.
  5. Add a small splash of water and cook the meat in 3-4 minutes.
  6. Roast the peanuts in a dry hot frying pan. Serve the curry with the meat and sprinkle the nuts over it.
