Pork fillets with mango sauce

Grate the ginger. Chop the coriander. Peel the mango with a peeler and cut the flesh into slices of the kernel. Puree the mango with the ginger and coconut milk in the blender to a smooth sauce.

Rub the pork steaks with salt, pepper and cumin. Heat the oil in a large frying pan and fry the steaks in brown and cooked for 8-10 minutes, turning them after 4-5 minutes. Keep them on a plate warm under aluminum foil.

Stir the mango sauce through the shortening and heat while stirring until the sauce is of good thickness. Serve the pork fillets with the mango sauce. Garnish with coriander.
