Heat the oil and fry the onion 7-8 minutes.

Add the garlic and ginger and fry for 1-2 minutes.

Put the marinated meat, green peppers, caster sugar, sifted tomatoes and meat stock through and simmer for about 25 minutes.

Garnish with coriander if necessary. Delicious with white rice and seasoned cauliflower (see tip).
