Pot roast with orange gremolata
A tasty Italian recipe. The main course contains the following ingredients: meat, orange (scrubbed), olive oil, ribs (in 4 pieces), onion (in coarse pieces), celery (in pieces), winter carrots (in strips), tomato cubes (a 400 g), flat parsley ((a 20 g), chopped) and garlic (chopped).

Grate half of the orange peel of the orange and squeeze out the fruit.

Heat the oil in a frying pan.

Sprinkle the ribs with salt and pepper.

Fry the meat over high heat around brown.

Add the onion, celery and winter carrot and fry for 2-3 minutes.

Add the orange juice and the tomato.

Bring to the boil and simmer the meat over low heat in 2-2 1/2 hours with the lid on the pan soft and done.

In a bowl, mix the orange zest, parsley and garlic (this mixture is called gremolata).

Season the meat with salt and pepper.

Serve with the gremolata.
