Potato salad with creme fraiche and mint
A tasty Dutch recipe. The vegetarian side dish contains the following ingredients: new potatoes (scrubbed), lemon (scrubbered), crème fraîche, mint (leaves finely chopped pair) and red pepper (in thin rings and seeds removed if necessary 1).

Boil the potatoes for 15-20 minutes in water with salt or until they are wonderfully soft if you prick them with a fork.

Drain them in a colander and let them dry steam.

Let them cool slightly and cut them in half.

Grate the yellow skin of the lemon and squeeze out the lemon.

Add the crème fraîche, the lemon zest and the juice to the potatoes.

Season with salt and pepper and mix.

Add some fresh mint and sprinkle the salad with some mint.

You can also add the red pepper..
