Light the barbecue or preheat the oven to 200 ºC.

Clean the potatoes and wrap them in aluminum foil.

Place them in the hot coals of the barbecue for 30 minutes, or bake in the middle of the oven for about 40 minutes. Turn them regularly during popping.

In the meantime, heat the oil in a frying pan over a very low heat. Press the garlic cloves above and add the saffron.

Heat 10 minutes on low heat or on a simmer plate. It does not have to start baking, but a little bit of 'pulling'.

Turn off the heat when it starts to splash. Allow to cool. Mix the mayonnaise with the garlic-saffron oil.

Check whether the potatoes are cooked by puncturing with a fork: if it goes out easily, the potato is done.

Serve with the mayonnaise.
