Potato salad with herring and snow peas

Directions

  1. Peel the potatoes.
  2. Clean the snow peas.
  3. Boil the eggs for 8 minutes and peel them. Cut them in half lengthwise.
  4. Stir in the mayonnaise, the sour cream, the lemon juice and the capers.
  5. Cut the cleaned herring into pieces of about 3 cm wide.
  6. Boil the potatoes in slightly salted water for about 20 minutes.
  7. Drain and steam them dry. Allow the potatoes to cool.
  8. Cook the snow peas in about 6 minutes al dente. Drain and let them cool.
  9. Cut the cooled potatoes into cubes.
  10. Combine the potato cubes, snow peas and the mayonnaise mixture.
  11. Divide this salad into 4 plates.
  12. Place 2 half eggs in the center of each plate. Sprinkle the eggs with parsley. Arrange the pieces of herring around it.
