Boil the potatoes in the skins and let cool.

Peel and cut into slices. Spoon the salmon with the pickle, onions and parsley through the potatoes.

Puree all the ingredients for the dressing with a hand blender into a smooth sauce.

Spoon the dressing through the potato salad and season with pepper. Store in the refrigerator until use.
