Powerfood salad with spinach and beets


Meal salad with wholemeal couscous, spinach, superfruit mix, hemp protein, beet and avocado dressing.

Directions

  1. Put the couscous with the superfruit mix and hemp protein in a large bowl.
  2. Pour the boiling water over it, stir and let stand for 10 minutes.
  3. Cut the avocado half in half and remove the kernel. Scoop the flesh from the skin with a spoon.
  4. Halve the lemon and press 1 half out. Cut the other half into segments.
  5. Put the avocado, the hemp protein, 2 tbsp lemon juice, the buttermilk, pepper and salt in a high cup and puree with the hand blender into a dressing.
  6. Peel the beets and grate them with the fine grater from the food processor. Stir the couscous with a fork and scoop with the beetroot.
  7. Cut the spinach coarsely and scoop on a large flat dish. Divide the couscous over it.
  8. Chop the walnuts and banana chips coarsely. Crumble the white cheese over the salad.
  9. Sprinkle with the superfruit mix, walnuts and banana chips. Serve the salad with the dressing and lemon wedges. Yummy! .
