Directions

  1. Put the flour, yeast, sugar, baking powder and the salt in a bowl. Make a well in the middle and pour in the hot water.
  2. Knead for 8 minutes into a smooth dough. Let rise for 30 minutes.
  3. Preheat the oven to 225 ºC.
  4. Knead the dough again and divide into 10 equal pieces. Roll out into rolls of 40 cm long. Place each roll in a U-shape.
  5. Take the ends and turn them around each other. Push the ends into the bend of the U. Make 9 more pretzels.
  6. Place them on a griddle covered with parchment paper. Split the egg and brush with the egg yolk (the protein is not used).
  7. Sprinkle with the sea salt and let the pretzels rise for another 10 minutes. Bake for about 15 minutes in the middle of the oven until brown and done.
