A delicious European recipe for puff pastry packages with salmon.

Preheat the oven to 190ºC.

Place the just thawed slices of puff pastry next to each other. Place a square of cooked rice in the middle of 4 slices.

Spoon the cubes of salmon fillet, spring onion, parsley, a pinch of salt and the beaten egg into a bowl. Divide this mixture over the rice.

Moisten the edges of the puff pastry. Cover the fillings with a slice of puff pastry and press the edges together. With fresh puff pastry: spread the filling over 1 long side of the dough and fold over the other side. Press the edges together again with the teeth of a fork. Brush the tops of the packages with egg yolk.

Place the packages on the baking sheet. Fry the packets crispy and golden brown in about 15-20 minutes. Divide them over the plates and garnish with a handful of lamb's lettuce.
