Preheat the oven to 200ºC.

Cut the slices of puff pastry into 4 squares (total 8). With the blunt side of a knife, carve edges on the sides of the puff pastry and brush them with whipped egg yolks. Prick holes in the middle of the dough with a fork.

Cut the chorizo into cubes and fry it crispy in a dry frying pan. Crumble the chorizo in a food processor into a crumble. Remove the puff pastry squares with tomato from the oven and sprinkle with the crumble.
