Puff pastry snacks with tomato and chorizocrumble

Preheat the oven to 200ºC.

Cut the slices of puff pastry into 4 squares (total 8). With the blunt side of a knife, carve edges on the sides of the puff pastry and brush them with whipped egg yolks. Prick holes in the middle of the dough with a fork.

Cut the to into slices and divide the to over the puff pastry. Put a sprig of thyme on it. Bake the puff pastry in the oven in about 15 minutes until golden brown and crispy.

Cut the chorizo into cubes and fry it crispy in a dry frying pan. Crumble the chorizo in a food processor into a crumble. Remove the puff pastry squares with tomato from the oven and sprinkle with the crumble.
