Pumpkin curry with green beans

Remove the seeds from the pumpkin.

Cut the pumpkin into pieces of three cm.

Chop the onion coarsely.

Finely chop the garlic.

Clean the green beans and halve them.

Heat the oil in the frying pan and fry the pumpkin, onion and garlic with curry powder for two minutes.

Pour in the vegetable stock and coconut milk and bring to the boil while stirring.

Smother the pumpkin gently in ten to twelve minutes.

In the meantime, cook the green beans in a pan with plenty of boiling water with a little salt in 8 to 10 minutes.

Rinse them in a sieve under cold running water and let them drain.

This way the beans stay nice and green.

Spoon the green beans through the curry and warm again.

Sprinkle the cashew nuts over it.
