Directions

  1. Sprinkle the meat around with salt and pepper and sprinkle lightly with flour. Heat 2 tablespoons of oil in a frying pan and fry the pieces of meat in 2-3 portions in a few minutes. Scoop out the pan in between to bake the next portion.
  2. Stir the cakes on the bottom of the pan and add 1 tablespoon of oil. Fry the onion rings gently and lightly brown for about 5 minutes. Add the garlic, mace and 3/4 of the sage and fruit for another 2 minutes.
  3. Put all the meat back in the pan and pour the tomato cubes and stock until the meat is just below. Stir and bring to the boil.
  4. Turn the heat source down and place the lid on the pan. Let the meat simmer slowly in about 2.5 hours.
  5. After about 2 hours add the pumpkin and beans and simmer for a minimum of 30 minutes.
  6. Sprinkle with the remaining sage. Tasty with baguette.
