Pumpkin with goat's cheese and mint
Baked pumpkin parts with ras el hanout, mint and goat cheese

Preheat the oven to 180 ° C. Halve the pumpkin and remove the seeds and stringy inside with a spoon.

Cut the halves into sections of about 1 cm and put them on a baking sheet covered with parchment paper.

Drizzle with olive oil and sprinkle with ras el hanout and pepper and salt.

Fry the pumpkin parts for approx. 40 minutes in the oven until golden brown. Turn halfway.

Meanwhile, remove the leaves from the sprigs of fresh mint and cut them into strips.

Remove the pumpkin parts from the oven and place them in a large bowl. Crumble the goat's cheese on top and sprinkle with the mint.

Serve warm, lukewarm or cold.
