Directions

  1. Heat the tortilla wraps for 1/2 minute in a dry, hot frying pan or between 2 plates in the microwave at 400 Watt so that they become more supple.
  2. Prepare the avocado with the lemon juice and brush half of each tortilla wrap.
  3. Mix the pepper with the corn, cumin and chili powder. Divide this mixture over the avocado and sprinkle with the grated cheese.
  4. Fold the tortilla wraps double. Heat a little oil in a frying pan and lightly brown the wraps on both sides until the cheese has melted slightly.
  5. Serve the quesadillas with a spoonful of sour cream and a sprig of coriander on them.
