Directions

  1. Cut the chorizo ​​into pieces and chop the onion. Peel the sweet potato and cut into cubes of 1 x 1 cm (brunoise).
  2. Fry the chorizo ​​in a frying pan for 5 minutes on low heat. Change regularly. Add the onion and potato and spoon over.
  3. Add the water and boil for 10 minutes over medium heat with the lid on the pan.
  4. Halve the green pepper in the length, remove the seeds with a sharp knife and cut the flesh into small pieces. Grate the cheese.
  5. Add the pepper to the potato chorizo ​​mixture and remove from the heat. Purée with the hand blender to a smooth puree.
  6. In the meantime, heat the oil in a frying pan and fry the sausages in 12 min. Until golden brown and done. Remove from the pan, allow to cool slightly and cut into slices of ½ cm wide.
  7. Brush half of the wraps with a generous spoonful of sweet potato mashed potatoes. Divide the slices of sausage over them and sprinkle with the cheese.
  8. Place the rest of the wraps on the quesadillas.
  9. Heat 2 frying pans and place a quesadilla in each pan. Bake for 4 minutes on medium heat. Turn halfway.
  10. Cut the quesadillas each in 6 points and keep warm under aluminum foil. Bake the remaining 2 quesadillas in the same way.
