Quiche of sweet potato with spinach and goat's cheese

Preheat the oven to 200ºC.

Line the quiche mold with baking paper. Hash the slices of sweet potato with 2 tablespoons of olive oil. Lay the potato slices crosswise in the quiche shape, cut them at the sides if necessary. Bake the potatoes in the oven for about 15 minutes.

In the meantime, mix the eggs with the rosemary, garlic, cream and goat's cheese.

Heat the rest of the olive oil in a frying pan and fry the onion glassy. Then add the spinach and allow it to shrink. Spoon the spinach through the egg mixture and season with salt and pepper.

Pour this mixture onto the potato base and bake in the oven in about 45 minutes until tender and golden brown. Tasty with a green salad.
