Directions

  1. Preheat the oven to 200ºC. Heat the butter and fry the onions with the thyme leaves, garlic and vinegar in about 15 minutes.
  2. Distant the quiche shape and coated with the dough. Beat the eggs and stir in the crème fraîche, goat cheese, nutmeg, pine nuts and 2/3 of the rocket. Season with salt and pepper.
  3. Spread the onion mixture over the dough and pour the egg mixture over it. Bake the quiche in the oven in about 40 minutes until golden brown.
  4. Divide the remaining arugula over the quiche before serving.
