Quiche with smoked ham and spring onion

Preheat the oven to 200 ° C.

Press the dough with the baking paper into the mold. Push the dough well against the walls and in the corners; let the dough hang over the edge.

Prick holes in the dough bottom with a fork. Cut the spring onions into rings. Sprinkle half of the spring onions, lay loosely the slices of ham and sprinkle with the rest of the spring onions.

Beat the eggs. Mix 2/3 of the egg mixture with the mascarpone and the mustard. Season with (freshly ground) pepper and possibly salt.

Pour this into the dough bottom. Fold the overhanging dough inwards. Brush with the remaining egg mixture and sprinkle with sea salt. Bake the quiche in the oven in 40 min. Until golden brown and done.
