Cut the peeled potato into cubes.

Cut the sausage into cubes.

Beat the eggs with salt and pepper and the thyme or oregano.

Heat the oil in a frying pan with a non-stick coating.

Fry the potato cubes on a medium heat until they start to color.

Let the sausage briefly fry.

Put the vegetables through.

Pour the eggs over.

Put a lid on the pan and let the omelette burn over medium heat for about 10 minutes until the bottom is colored and the top is solidified.

Let the omelet slide out of the pan onto a plate.
