Quick stew with sausage and couscous


Quick stew with sausage, couscous, eggplant and chickpeas.

Directions

  1. Prepare the couscous according to the instructions on the package.
  2. Chop the onion and cut the aubergine into cubes. Let the chickpeas drain.
  3. Roast the sesame seeds in a frying pan without oil or butter in 3 min. Golden brown. Let cool on a plate.
  4. Heat the oil in the same frying pan and fry the sausages for 2 min. Remove from the pan and fry the onion with the aubergine in the same shortening 4 min.
  5. Add the paprika, chickpeas and water. Bring to boil.
  6. Add the sausages and roast over low heat for 10 minutes. Season with salt and pepper.
  7. Divide the couscous over plates. Serve with the sausages and vegetables. Sprinkle with the sesame seed.
