Quinoa biscuits with spinach salad
Delicious vegetarian recipe. These quinoa biscuits are an excellent meat substitute.

Cook the quinoa according to the instructions on the package. Drain any excess moisture and allow to cool down until used.

Cut the cauliflower into florets and the spring onions into pieces.

Put the cauliflower, spring onions and leaves of the thyme in the food processor and grind until the crumb has the size of rice grains. Add halfway through the cheese.

Put the cauliflower mixture in a bowl and stir in the eggs and flour.

Then add the quinoa and mix well. Season with (freshly ground) pepper and possibly salt.

Heat the oil in a frying pan. Put 4 heaps of 2 tbsp batter in the pan and fry in 7 min. Until done. Turn halfway. Repeat with the rest of the batter.

Slice the garlic. Heat the oil in a stirring stir fry the garlic and spinach 5 minutes. Season with (freshly ground) pepper and salt.

Serve the spinach with the quinoa biscuits. Bon appétit! .
