Quinoa burger with feta and zucchini

Directions

  1. Boil the quinoa in a saucepan with 200 ml of boiling water in 10-12 minutes.
  2. Allow the quinoa to cool slightly.
  3. Puree the chickpeas in the food processor.
  4. Add half of the feta with the parsley and egg and mix well.
  5. Then pour in the quinoa and season the mixture with salt and freshly ground pepper.
  6. Form the mixture into 4 burgers and leave on a plate covered with plastic wrap in the fridge for 30 minutes.
  7. Heat half of the tablespoons of olive oil in a skillet and bake the bottom of the quinoa burgers in 2-3 minutes until golden brown.
  8. Turn the burgers carefully with a spatula and sprinkle the rest of the feta and the to it.
  9. Put a lid on the pan and bake the burgers in 3-4 minutes until golden brown and let the feta melt.
  10. Preheat the oven grill to the highest setting.
  11. Cut the bread through the middle and place them with the cutting edges upwards on the grill grid, and grill them 10 cm below the hot grill element in 1-2 minutes.
  12. Meanwhile, season the slices of zucchini with olive oil and grill them in a hot grill pan until they are nicely browned and done.
  13. Place the bottom of the bread rolls on the plates.
  14. Spread some arugula over it and put the quinoa burgers on it.
  15. Garnish with the roasted zucchini and lay the tops of the bread roll top.
