Vegetarian quinoa dish with asparagus, tofu, peas and mint.

Directions

  1. Boil the quinoa for 14 minutes in plenty of boiling water. Drain.
  2. Meanwhile cut the asparagus tips into three equal pieces. Heat the oil in a stir-frying pan, the asparagus tips and stir-fry strips for 4 minutes on a high heat.
  3. Change regularly. Add the peas and cook for 3 minutes.
  4. Put the lettuce in a large bowl. Make a dressing of the olive oil and the mix for salad dressing from the meal package. Mix through the lettuce.
  5. Cut the fresh mint fine.
  6. Stir the quinoa with a fork. Add the mix for quinoa from the meal mix package and mix with the tofu vegetable mixture.
  7. Sprinkle with the mint. Serve with the salad.
