Rabbit stewed in lentils
A tasty recipe. The main course contains the following ingredients: meat, butter, smoked bacon, rabbit (in parts), fresh thyme leaves, winter carrot (in small pieces), onion (chopped), garlic (finely chopped), beef stock (380 ml), blonde lentils and Zaanse mustard.

Heat the butter in a frying pan and gently fry the bacon.

Rub the rabbit parts with salt and pepper. Bake the rabbit parts in the shortening around light brown. Add the thyme, carrot, onion and garlic and cook for another 2 minutes. Scoop the lentils through the shortening, add the fondue and 250 ml hot water and bring everything to the boil. Place the lid on the pan and simmer the pieces of rabbit gently for about 1 hour. Check occasionally if there is enough moisture in the pan.

Season to taste with salt and pepper and spread over 4 plates. Put the mustard in a bowl and serve it separately. Delicious with red cabbage with prunes.
