Directions

  1. Cut the aubergine into equal cubes, sprinkle with salt and let rest for about 30 minutes.
  2. Cut the zucchini, red onions and yellow peppers into cubes of the same size.
  3. Mix all vegetables with a few tablespoons of olive oil, the dried Provençal herbs, salt and pepper.
  4. Turn the vegetables about 8 spears and grill for about 2 minutes per side.
