Ratatouille with beef sausages
A tasty French recipe. The main course contains the following ingredients: meat, eggplant (in slices), olive oil, potato slices (700 g), beef sausages ((4 pieces), chopped), coarsely chopped wok vegetables (400 g), wok cubes (garlic) and tomato cubes (400 g).
Cut the eggplant slices in four. Put them in a colander with 1 tsp salt. Let stand for 15 minutes. Heat the oil in a stir frying pan the potato slices in 10 min. Golden brown. Remove the salt from the eggplant under cold running water and pat the eggplant dry.
Add the sausage to the potato slices and stir-fry for 5 minutes. Add the eggplant and the wok vegetable and stir-fry for 5 minutes. Add the wok and let it melt. Add the tomatoes and bring the dish to the boil. Season with salt and pepper. Serve hot or lukewarm at your choice.
