Ravioli with eggplant and herbs


A tasty Italian recipe. The main course contains the following ingredients: meat, ravioli (with 4 cheeses (pasta a 250 g, chilled ones)), olive oil, onion (chopped), garlic (finely chopped), aubergines (in cubes of 1 cm), Italian herbs ((15 g), leaves finely chopped), white balsamic vinegar (vial 250 ml) and skimmed pork lettuces (in 4 pieces).

Directions

  1. Cook the pasta al dente according to the instructions on the package.
  2. Meanwhile, heat 2 tbsp oil in a frying pan. Fry the onion with the garlic 1 min. Add the eggplant and cook for 5 minutes. Spoon the herbs and vinegar through the eggplant and cook for another 3 minutes. Season with salt and pepper.
  3. In the meantime, heat the rest of the oil in another frying pan. Sprinkle the pork steaks with salt and pepper and fry the meat in 5 minutes brown and just done.
  4. Divide the pasta over 4 plates. Spoon the aubergine and add the meat. Tasty with grated Pecorino Romano (cheese).
