Directions

  1. Heat half of the butter in a thick-bottomed pan and fry the onion and apple for 2-3 minutes. Add the coals and the apple juice.
  2. Mix in the caster sugar, cinnamon, bay leaves, raisins and cranberries and simmer gently for 25-30 minutes. Scoop the coals occasionally.
  3. If the dish is too moist, take the lid off the pan for the last 5 minutes. Remove the bay leaves and stir in the rest of the butter.
