Heat the butter and fry the onion with the sugar for about 3 minutes.

Add the coals and stir fry for a few minutes.

Pour the beer slowly and bring to the boil. Stir in the coals well, add some salt and roast with the lid on the pan at a low setting in about 50 minutes.

Season the coals with salt and pepper and scoop in a bowl. Put the capers, olive oil and balsamic vinegar through.
