Red cabbage wraps


Wraps made from leaves of red cabbage with a filling of mint, parsley, pecans, raisins and quinoa.

Directions

  1. For 10 pieces, pull the outer 5 leaves of the red cabbage. You do not need the rest of the coal.
  2. Halve the leaves and cut off the hard pieces of grain and loose pieces.
  3. Immerse them for 15 seconds in a large pan of boiling water. Then immerse them in a bowl of cold water. Let it drain well.
  4. Mix the harissa with the oil. Finely chop half of the fresh mint and half of the parsley. Clean the lemon and grate the yellow skin.
  5. Chop the nuts coarsely. Stir in the harissa oil, green herbs, lemon zest, nuts, raisins and yogurt through the quinoa bulgur.
  6. Fill the red cabbage leaves with the quinoa. Roll them close from the thickest side. Garnish with the rest of the sprigs.
