Directions

  1. Put the flour, salt and egg in a bowl and add the milk while beating with a whisk. Add the rice, the coconut and the mango pieces.
  2. Heat the oil in a frying pan and spoon 3 tablespoons of batter for 3 pancakes.
  3. Bake for 1 min. Turn them over with a spatula, press lightly and bake for another 1 min. Remove with a slotted spoon and keep warm under aluminum foil.
  4. Repeat 3 more times with the rest of the oil and the batter, so that you bake a total of 12 pancakes. Serve with the cane sugar.
