Rice with beans and pineapple


A nice Surinamese recipe. The main course contains the following ingredients: meat, red pepper, oil, onion (chopped), red pepper (diced), garlic (peeled), dried oregano, rice (Surinamese), coconut milk, red kidney beans (400 g), ham ( in thin strips), pineapple ((out of tin) and in small pieces).

Directions

  1. Cut pepper by half, remove seeds and cut pepper into thin strips.
  2. Heat oil in frying pan.
  3. Onions, peppers and red pepper gently sweeten 3-4 minutes.
  4. Squeeze out garlic.
  5. Stir in the oregano and rice and add 1 tsp salt.
  6. Add coconut milk and 200 ml of water.
  7. Rice covered for 10 minutes, gently boiling.
  8. Rinse kidney beans in cold water and let them drain well.
  9. Pour beans, ham and pineapple into rice.
  10. Roast rice in a further 5 minutes.
  11. Season the taste with salt and pepper.
  12. Delicious with a green salad with cubes of mango..
