Heat the olive oil and fry the onion and garlic. Add a pinch of saffron, the tomatoes and flour to stir fry for a few minutes.

Add the wine and fish stock and bring to the boil. Let it boil gently for 10 minutes without the lid.

Cut the fish fillet of your choice into cubes and add to the stock with the mixed seafood.

Cook the fish for a maximum of 10 minutes and finish the soup with finely sliced pre-rings or spring onions. Serve immediately.
