Beat the whipped cream with the vanilla and icing sugar until stiff. Then pour in the ricotta and gently beat into an airy mousse. Put the mousse in the refrigerator.

Heat the wine and granulated sugar in a saucepan and poach the pear cubes for about 10 minutes until they are completely soft.

Remove the pears from the pan, allow to cool and boil the cooking liquid into a syrup.

Divide the pears over 4 glasses, drop some syrup and add some ricotta mousse.

Sprinkle with the chopped walnuts and leave to cool for 1 hour in the refrigerator.

Sprinkle just before serving with some honey.
