Preheat the oven to 200 ° C.

Split the eggs. Beat the egg whites together with the sugar in a fat-free bowl with a mixer until stiff peaks.

In a different bowl, beat the egg yolks with the sugar creamy and airy. Spoon the ricotta through the yolk mixture. Gently squeeze the proteins through.

Clean the lemon, grate the yellow skin fine and per the fruit. Roast the pine nuts. Halve the strawberries.

Stir in the lemon zest and juice with the flour and pine nuts through the ricotta mixture. Grease the dishes and spread the strawberries over the dishes.

Spoon the ricotta mixture onto the strawberries. Place the dishes on the grid and slide in the middle of the oven.

Bake the desserts in about 20 minutes until done. Allow to cool slightly before serving.
