Riser salad with prawns


A tasty Dutch recipe. The side dish contains the following ingredients: fish, potatoes (Opperdoezer Ronde), fine broad beans (300 g, frozen), grilled peppers (295 g), Belgian mayonnaise (pot 650 ml), Dutch shrimps (150 g), parsley ((30 g) and leaves coarsely cut).

Directions

  1. Peel the potatoes and cut out the 'eyes' with a sharp, pointed knife. Halve them and put them in a pan with a layer of water of 2 cm. Boil the potatoes in 20 minutes with the lid on the pan. Drain and leave with the lid on the pan for another 5 minutes. Meanwhile, cook the green beans in 6 minutes until al dente. Cut the potatoes into slices of 1 cm. Pour the green beans and let cool under cold running water.
  2. Mix 2 tablespoons of liquid from the jar of peppers with the mayonnaise into a dressing. Season with pepper. Mix the dressing through the potatoes.
  3. Cut the peppers into strips and mix with the green beans, shrimps and parsley through the potatoes. Serve lukewarm or at room temperature.
