Place the slices of roast beef on a plate and spread the arugula over it.

Mix the horseradish with the crème fraîche and 1 tablespoon of water. Season with salt and pepper and sprinkle this dressing over the roast beef.

Sprinkle with the Parmesan cheese and drizzle with the olive oil.
