Roasted aubergines with orange dressing

Preheat the oven to 200 ° C.

Halve the aubergines in the length and cut the flesh crosswise without damaging the skin.

Place the aubergines with the cutting edge upwards in the oven dish.

Push the oregano leaves into the flesh. Sprinkle with little salt and drizzle each half with 1 tbsp oil. Bake for about 45 minutes in the oven.

Squeeze out the oranges. Boil the juice in a saucepan to half.

Mix the juice with the oil and capers. Season with pepper and salt. Allow the dressing to cool.

Cut the chives finely and chop the pecans roughly.

Place the aubergines on a dish and drizzle with the dressing. Sprinkle the nuts and chives.
